Homemade Minestrone Soup
1. Combine sliced or cut carrots, celery, corn (optional), kidney beans, pinto beans, and diced tomatoes (do not strain or drain juice) in a slow cooker with vegetable or chicken broth. Add black pepper to taste. Cook on low for 6 to 8 hours or high for 3 to 4 hours.
2. 30 minutes before it’s finished, add sliced or cut zucchini and mini shell pasta. Season to taste and finish cooking. Top with Parmesan cheese if desired.
